Sesame Beef & Broccoli Power Bowl with Jammy Eggs

Ingredients
For the Bowls:

1 lb flank steak or sirloin, thinly sliced against the grain

4 large eggs

3 cups broccoli florets

1 cup cooked quinoa or brown rice

1 large carrot, julienned or spiralized

1 red bell pepper, thinly sliced

2 green onions, chopped

1 tbsp sesame seeds

Optional: sliced avocado, cucumber ribbons, or pickled radish
For the Marinade & Sauce:

¼ cup low-sodium soy sauce or tamari
-
2 tbsp rice vinegar
-
1 tbsp sesame oil
-
1 tbsp honey or maple syrup

2 garlic cloves, minced
-
1 tsp fresh ginger, grated
-
1 tsp cornstarch mixed with 2 tbsp water (to thicken, optional)
For Serving:

Sriracha or chili crisp

Method
1. Marinate the Beef

In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.

Reserve half for the sauce. Toss beef in the remaining marinade and let sit 15–30 minutes.
2. Cook Jammy Eggs

Bring a pot of water to a boil. Gently lower eggs in and cook for 6½–7 minutes.

Transfer to an ice bath. Once cool, peel and slice in half.
3. Cook Broccoli & Beef

Steam or sauté broccoli until crisp-tender (about 4–5 minutes). Set aside.

Heat a large skillet over medium-high heat. Cook beef in batches until browned (2–3 minutes per batch).

Pour reserved sauce into the skillet (add cornstarch slurry if desired) and simmer 1 minute until glossy.
4. Assemble Bowls

Divide quinoa or rice among bowls.

Arrange beef, broccoli, carrots, bell pepper, and jammy eggs.

Drizzle with extra sauce, sprinkle with sesame seeds and green onions.
